Free Ebook About Eating and Health

 
Kevin Gianni Of "The Renegade Health Show" is offering for a limited time, a free E- Book. It's called "High Raw." It is a wonderful overview of getting healthy in every area of your life. Of course the e-book's main emphasis is on tips and information about getting started eating raw uncooked vegetables. Kevin believes in 75% raw uncooked veggies, 20% cooked veggies, and 5% fun! Now this does not mean that you must follow those exact numbers. Just adding more, and more, raw uncooked veggies, and fruits, to your life, will help you in your quest to be healthier. I do pretty well getting the rainbow of fruits and veggies into my diet these days, but with my thyroid issues, certain dark green veggies have to be cooked before I can eat them. Which is why I use some other greens like dandelion and parsley when juicing my raw veggies. The Queen's Table Has A Facebook Page


In order to serve you better...I created a new facebook page called "The Queens Table Blog" just for those tech savvy peeps who like to follow their blog friends on facebook. So now I also confess to adding the ubiquitous "Like" button on this blog too. It is located In the right hand column. I will probably be adding some other social networking buttons as well. What's happening to me? Did I drink some Kool-Aid? Anyway I think that's what the guy above is drinking. Hot steaming Kool-Aid.

Since we are talking about the silly business of blogging... Here is a quick suggestion to the new followers of 'The Queen's Table' blog. I have spent many hours researching the information that inspires a person to get healthy, and placed it on the pages above to make your change to a new way of eating, and purchasing of foods easy! I want you to succeed! You can do this! Please use the page tabs located at the top of this blog to find many valuable links, videos, websites, articles on food, health, and social justice topics. My best  recommendation is to go to the 'Inspiration' page and pick out a few documentaries to watch. Once you learn what is going on in the industrialized food world, you will never go back to the sad food choices of your past. You will know too much! That is a good thing!!! Then read "Get Started', 'Substitutions,' and the 'Avoid' pages. These will help you stay on track during your transition. You will love your new more flavorful food! "The White Rabbit" A Dessert Juice With Jicama, Apples, Pear, And Coconut


This is sooooo yummy! Dessert in a glass! I have been working on this amazing beautiful healthy dessert juice I call "The White Rabbit " for awhile, as I kept trying to keep the ingredients white without turning green. I learned celery, and cucumber even when peeled, still make a light green juice color. Finally I am satisfied with my elixir of the gods, "The White Rabbit!' With the added light organic coconut milk it does have a slight pina colada flavor without the pineapple. It is naturally very sweet, so diabetics should have this treat early in the day, and perhaps also add some peeled 'sun-choke' into the juicer if you have some. My batch made enough for 3 full wine glasses, so when it came time for a refill of the hubby's glass, he jumped from the table to get some! I think you will love it too! It would be great to serve for special occasions, or to friends who never heard of juicing! Let me know if you try this one!

The White Rabbit

2 Granny Smith Apples peeled and cored
1 Bosc Pear peeled and cored
1/2 lemon peeled
1 inch of fresh ginger peeled
1/3 of a large jicama peeled
2oz of light organic coconut milk

Prepare your fresh organic ingredients by peeling and coring. Add to your juicer all except the light organic coconut milk. When you are done juicing your items add the light organic coconut milk to your juice container and stir. Pour and enjoy! So delish a dessert that you'll be licking your lips! Note: Natures sizes usually vary, my batch when completed made just over 2 measuring cups. I had quite a large jicama, if your jicama is smaller or just regular size you might put 1/2 of it peeled in the mix. You can add a tad more coconut milk if needed too. An excuse for a little taste testing! Yum!

I created this little graphic from a saying that seems to have no attribution. Please feel free to use it and pay the knowledge forward! From my experience and investigations, these words of wisdom ring true. Simple but effective! Getting back to natures basics and earth made sources seems to be the answer we now need to heal. The Big Ag and Big Pharma "business of sickness" mostly leads to a poor quality of life and sometimes death. The beauty of non-toxic plants and vegetables is made apparent both on the inside and the outside of us. We are connected to our world, and reap the results of our choices. Whats That? Blood Oranges!


I'm having a bit-o-fun celebrating the release of the old afternoon soap opera turned movie, "Dark Shadows." So here is a snack Barnabas Collins, (seen in my graphic below) and Edward Cullen might enjoy.  We purchased Blood Oranges a month or so ago, just to give them a try, as I had never eaten one. I felt they were not as flavorful as regular oranges, and rather creepy looking when cut open...Although "Someone" thought they were very sweet and delicious. Hmmm... who knew Barnabas was into plants too!

Chia! Chia! A Healthy Breakfast Choice


Oh yes, it's the same 'chia-chia' you rubbed on that clay head, to grow some green chia hair, in the seventies and eighties! Silly humans! Alright I confess I had a chia head! Little did we realize back then that those tiny seeds we were playing with, are one of the most nutritious and beneficial foods on the planet! These little ancient seeds grown by the Aztecs, will do you a world of good! They contain more Omega 3 than flax, five times more calcium than milk, fantastic dietary fiber, they are an excellent source of iron and trace minerals, and they are low glycemic! Sounds like a power food to me!



You only need a few tablespoons of chia per bowl, then add fruit, nuts, gogi berries, spice, and almond milk. Let it sit for a few minutes to gel up, and then perhaps add a splash more almond milk. Use hot water to make a hot cereal mix if you prefer.


I purchased the cereal online kept them in the freezer till needed. Then I stored my opened chia bag in the refrigerator. You can see in the Chia Goodness cereal mix above that it also contains buckwheat (which is a fruit seed), hulled hemp seeds, celtic sea salt, and pumpkin seeds too.


Some people make their own cereal mix from chia seeds, and call it chia pudding. I use plain chia in all kinds of recipes including soups, sauces, and smoothies. Just add water to the seeds first to let them create their gelled magic. Going dairy free? You can use chia in place of an egg in baking recipes.


Having a chia breakfast one or two times a week, is part of my effort to cut back on eggs. I use almond, coconut, or hemp milk instead of cows milk. These milks taste great, and contain no dairy fat, antibiotics, or hormones! Plus remember, the chia alone contains five time the calcium of milk. No moo needed.


We stay stocked up on this gelatinous healthful seed! 


As with any cereal, you can add whatever you personally like onto your chia mix, as the chia itself imparts no flavor other than some nutty crunch. I love loading my chia breakfast with sliced apple and cinnamon. Which is doubly great for Diabetics, because cinnamon helps in lowering blood sugar, and chia is low glycemic, as it's fiber moves very slowly through your system. So go ahead and indulge in a quick, easy, healthy breakfast of Chia! Chia! Smile brightly and know you are doing something good for your body! Gee... I wish I still had that super smiley chia head!

Banana Strawberry Kefir Smoothie



Kefir being a fermented food, is a pro-biotic like yogurt, but better, because kefir brings good bacteria to the gut, and helps them colonize. Oh yippee good stuff growing inside! Since I bought a non flavored kefir, I decided to make a smoothie, because the fruit would make it sweet. Just in case I did not like the taste of kefir.

Carmelized Onion Tomato Naan And Salmon Pesto Naan Pizza!


Oh yes we still eat Pizza! I am married to a professional musician! Pizza is in his soul! Since I am not a Celiac patient, I can eat gluten, I just try to eat other things most of the time. I find the Tandoori style flat bread known as Naan to be the perfect small serving size. This is far healthier than the heavy mega-greasy delivery pizza! Naan which is small, thin and light, and also comes in whole grain varieties. This style of pizza keeps you from loading up on too many carbs and gluten, while still enjoying a familiar favorite. Just be sure to source fresh organic ingredients for your toppings.

We usually have a Naan Pizza dinner once a week. It has become the running joke that if it's Monday, it must be pizza! Seems it's the easiest way for me to get back into the dinner routine, after a weekend of activities. Ben is always very happy to oblige my quick fix for dinner. We keep packages of whole grain Naan in the freezer at all times!



I am going to show you two versions of Naan pizza, because Naan is a great delivery system for whatever you have in your pantry. You can try a little olive oil on the crust, or a pesto mix, standard tomato sauce, a vegan nut mix, a bean taco style mixture, or add some bruschetta. You can put vegetables like peppers, broccoli, asparagus, artichokes, or avocado as a topping. If you have some pastured chicken, or organic pastured no nitrate lunch meat you can add that as well. It is just one of those anything goes productions! For cheese use organic mozzarella, Parmesan, organic cheddar, or vegan no soy daiya cheese. Or all four! It's your Naan Pizza, so do what you like! These two pizzas are just an example of what drool worthy pizza looks like when you are making better pizza choices. I think you can handle this! We do!



Caramelized Onion And Tomato Naan Pizza

1 pkg Naan
4 Tbs organic tomato sauce
Onions you have already caramelized in pan
Sliced Roma Tomato
Fresh Ball of Organic Mozzarella Cheese
Fresh Parmesan Cheese shredded
Hemp Seeds
Basil and Oregano
2 Tbs organic olive oil 

Lay Naan on baking sheet and rub with olive oil. Prepare onions in a pan by sauteing till browned. Slice more onions than you need, because they will shrink down. Spread 2 Tbs organic tomato sauce on each Naan. Cut thick slices from your mozzarella ball. (I used Blue Ridge Dairy Farms fresh mozzarella in water, that we had purchased from Arganica.) Arrange mozzarella slices across each Naan to your liking. Place slices of Roma tomatoes on the mozzarella and evenly spread your onions. Add Parmesan shreds, hemp seeds, and spices. Place Naan Pizza in 400 degree pre-heated oven and cook for 10 minutes. Gorgeous! Serve with fresh salad greens, and homemade veggi juice!



Salmon Pesto Naan Pizza

1 Pkg whole grain Naan
Enough pesto mix to smear across Naan
1 can sustainably caught Wild Alaskan Salmon 
Thin cut organic onion slices
Organic Cherry tomatoes sliced in half
Organic Shredded Mozzarella
Herbs De Provence
2 tbs organic olive oil


Place Naan on baking sheet, and rub the side that is facing up with oil. Spread pesto on Naan. Evenly space out chunks of salmon across both pieces of Naan. Add onion and tomato pieces. Sprinkle with shredded mozzarella and spices. 

 
 
Cook in 400 degree pre-heated oven for 10 minutes. 
Slice and serve with a salad, and homemade green juice. You can see how thin the crust is in this photo and that you are really not getting too many carbs. We usually have 2 or three slices for our serving. Leftovers are the next day's lunch treat! Yum!
